Saturday+Sunday: Savoury+Sweet

Here is 1 savoury recipe i tried about a month ago and is now a family favourite of ours, and 1 sweet recipe I want to try soon (want to see if it works as a lactose free version!)....

Savoury: (my adaptation)

One-Pan Mexican Chicken (serves 4)
A pack of taco/burrito seasoning
couple tblspns dried oregano/basil
2 garlic cloves, chopped / 2 big spoons of garlic in a jar
bit of olive oil
8 chicken drumsticks
a medium red onion, quartered+thinly sliced
1 medium red capsicum, chopped
400g can tomatoes
375g jar thick and chunky salsa
1 1/2 cups chicken stock
400g kidney beans, drained+rinsed
1/3 cup rice


Preheat oven to 180C. Put seasoning, herbs, garlic, chicken and enough oil to just coat the chicken into a  saucepan. Rub into chicken. Cook chicken until outside is browned. In a casserole dish (or any dish that can be oven-baked), add the browned chicken, onion, capsicum, tomatoes, salsa and stock. Bake for 50mins turning chicken halfway through. Add beans and rice. Stir. Bake for 20-25mins or until rice and chicken is cooked. Remove from oven. Serve with refried beans or by itself. Enjoy.
