Saturday + Sunday: Sweets + Squares

so as promised...the yummy slice recipe i was going on about the other day.

chunky rice slice with carob and coffee cream (from the friendly foods cookbook)

(dairy free, nut free, egg free, gluten free, soy free and low chemical)


preheat oven to 180 degrees. grease baking tin with butter. (i used muffin tins)
sift 1 cup rice flour w 2 tspns baking powder.
add 1 cup rolled rice (found this at the health food shop), 1/2 cup of puffed rice cereal (crushed) and 1/2 cup brown sugar.
mix well.
make a well in the centre and add 1/2 cup melted butter.
stir until well combined (i found i needed to add a bit of milk)
press mixture into tin.
bake for 20-25 mins until golden brown (mine only took 10-15 mins in the muffin tins).

while it's baking, make the cream mixture.
sift 1 cup icing sugar, 1/4 cup carob powder and 1 tspn decaf coffee into a  bowl.
in another bowl whisk 1/4 cup butter until pale and fluffy.
add the dry ingredients and 2 tspns of water.
beat well until creamy.

when slice is done, take out of the oven and leave to cool in the tray.
spread the coffee and carob cream on top. slice if needed.

mmm yum!

* please note, when i say butter i mean nuttlex or other dairy free butter. and when i say milk i mean rice milk. however you can use normal milk or butter, and cocoa powder instead of carob. but really...you can''t taste the carob in it. i was very excited about that fact!!

the one above was taken in the toilet (classy huh!!) at the little shop , complete with spit wads (surely needless to say, we share a toilet).

it was such a delightfully warm day today. spent the afternoon at the local surf club with friends enjoying the warm weather and not bad food.
